Using quality ingredients, sourced from Orkney wherever possible, Humes use traditional brining and oak smoking methods to skilfully showcase and enhance the fantastic flavours – delivered with a modern twist!

Established in 2016 by husband and wife team Ian and Anthea Hume - Humes | Quality Artisan Foods Orkney is the result of Ian’s, long-time hobby of smoking fish and cheese.

Both native Orcadians, Ian has been a deep sea trawlerman for almost all his working life and has a great love of the sea and its harvest – Anthea’s background is in administrative and community project work, however, they share a passion for celebrating and retaining many of the traditional preserving methods and recipes of their childhood.

From their production base - The SmokeShack – located at their home in Kirkwall, the couple create an ever-growing range of smoked goods. Current product range includes; smoked Orkney salmon; queenies (Queen scallops); mussels; mackerel; Orkney cheese; olives and pates.

Both Ian and Anthea believe that if a job’s worth doing – it’s worth doing well and their aim is to supply products which display their principles of quality, traceability and producer approachability.
