Business Focus - Orkney Craft Vinegar
Our latest Business Focus feature takes a closer look at innovative new Orkney Food and Drink member, Orkney Craft Vinegar.
The business was started by Sam Britten and Keith Harrison last year, although work to prepare some of their fantastic vinegars has been ongoing for some time.
Using local ingredients and botanicals, plus a lot of hard work, research and trial and error, the duo has created two delicious vinegars that are becoming increasingly popular with chefs and customers around the world.
Its Bere Malt vinegar is made using bere barley, an ancient Viking grain, and is left to mature in oak barrels for up to a year. Meanwhile, the Honey and Meadowsweet Vinegar uses pure honey and Orcadian spring water, which becomes a mead. This is then infused with locally grown meadowsweet, before being fermented a second time into vinegar.
These artisan methods are what sets the company apart and ties into the 'eat local' ethos of Sam and Keith.
